Rívesci (Ree-vessy) launched in September 2019 at Clonmel Applefest offering cooked from scratch vegetarian and vegan dishes from their 1976 vintage caravan. Co-Founders Shannon Forrest and Michelin Star trained Chef, Declan Malone felt that opening a food truck in Winter might be a little mad but it didn’t stop them. After spending many months researching and working on their menu offering they found there was a huge appetite for what they wanted to do. Successfully trading at Savour Kilkenny, Applefest Abbeyleix, Dunbrody House and Ballymaloe, Rívesci wished to set up a more permanent basis in Clonmel, and currently trade at the Quay Car Park on Wednesday’s and Friday’s from 10am - 3pm and at the Clonmel Farmer’s Market on Saturday’s from 10am - 2pm.
2020 saw Rívesci off to a great start by being mentioned in the Irish Independent, The Irish Times and The Sunday Times had them listed as one of the best 30 sandwich spots in the country!
